A soft and airy sponge soaked in milk, but still not soggy, sounds delicious, doesn’t it? That’s the tres leche, the popular cake from Mexico and Latin America. The tres leche means ‘three milk’. It is a super light sponge cake dipped in a mixture of three milks. It has three layers- cake, filling and topping. The tres leche is a celebration cake, and is eaten during the Cinco De Mayo celebrations.

The tres leche is a cake which is quite similar to the angel food cake. It is extra light and spongy due to the whipped egg whites in the batter. After the cake is baked, one can poke holes with a fork and pour the ‘three milks’ over it, namely, evaporated milk, sweetened condensed milk and the whole milk.

The main ingredients in this cake are egg, flour and baking powder. Butter can be used in the cake, but without butter it is incredibly light and has many pores, so it is really light. The butter makes it heavier. And apart from these there are also the three types of milk, the evaporated, sweetened and whole milk which make this cake unique. While the cake is baked, the three types of milk are mixed. After the holes are poked in the cake, the milk mixture is poured and the cake soaks this mixture overnight.

Then, some sweetened whipped cream is added on the top. You can sprinkle the cake with some cinnamon powder and decorate it with some fresh strawberries or any other fruit of your choice. This cake is super sweet and super scrumptious.
