Move beyond green tea and match, blue tea or butterfly pea flower tea is the new tea in town! Caffeine free, herbal, super healthy, this tea is one to watch out for! The tea is made using the leaves of the butterfly pea or Aprajita plant, along with some lemongrass. It has been brewed in South East Asian countries for centuries, but it is only now that its popularity is spreading to the entire globe.

The butterfly pea plant has mostly been used as a natural dye. But the blue coloured flower petals also have many medicinal properties, and is hence used as a tea variant. An interesting thing about this plant, also called Citoria ternatea, is that it changes colour owing to change in pH levels. It changes to purple when lemon juice is added to it! Fascinating, isn’t it?

It has many variations. In Thailand and Vietnam, the butterfly tea is mixed with honey and lemon. It is usually had after dinner, or as a refreshment. It is available as both hot and cold types. When served cold, this tea is mixed with honey, mint, cinnamon, passion fruit or ginger. It is also used as a natural food colour. For instance, the dishes Nasi kerabu or pulut tekan get their blue colour from this tea. It is also used in cocktails. So many uses!

The flavor of the tea has been described as ‘earthy and woody’. It is somewhat similar to a fine green tea, and not as fruity as Blue Curacao. So the flavor is pretty typical and similar to green tea.
